Beef Massaman Curry

INGREDIENTS:

  • 850g chuck steak large chunks
  • 3 large potatoes chopped into chunks
  • 2 carrots chopped into chunks
  • 1 brown onion roughly chopped
  • 2 cans light coconut milk (ayam)
  • 1 can maesri Massaman paste 
  • 150g green beans 
  • 1 tablespoons fish sauce
  • 300ml chicken or vegetable stock
  • 1tsp minced ginger 
  • 2 cloves garlic or minced 
  • 1/2 a lime
  • Optional: chopped peanuts and fresh coriander to serve

METHOD:
Step 1:
Brown beef then add in vegetables.
Step 2:
Mix together all liquids and pour over. 
Step 3:
Slow cook for 8 hours on low or 4 hours on high.
Step 4:
Last 30 minutes, add in 1 tablespoon of corn flour mixed with water and half a lime juice. 
Step 5:
Garnish with some chopped peanuts and top with coriander.
