Pineapple Coconut Mojito
INGREDIENTS:
• 2 oz coconut rum
• 2 oz pineapple juice
• 1/2 oz fresh lime juice
• 1/2 oz simple syrup (or to taste)
• Fresh mint leaves
• Ice cubes
• Pineapple wedge, for garnish
METHOD:
Muddle Mint: In a glass, muddle fresh mint leaves to release their aroma and flavour.
Mix Ingredients: Add coconut rum, pineapple juice, fresh lime juice, and simple syrup to the glass.
Shake: Add ice cubes and stir well to combine.
Serve: Fill the glass with more ice cubes and stir again.
Garnish: Garnish with a pineapple wedge and a sprig of mint.
